Sébastien Riffault makes wines that are different from those produced in the area where it is located. The winery works by pursuing the principles of biodynamics, and aims to preserve and respect the biodiversity of its territory. It was founded in 2002, and since then it has been striving to ensure that its wines are a reflection of the vinified varieties and the terroir where it is based.
The vineyards for Riffault Sancerre Skeveldra are oriented to the south and southeast and are over 55 years old. It is harvested manually to preserve the integrity of the grape and so that an initial selection of bunches can be made in the field. Once in the cellar, alcoholic fermentation begins spontaneously with native yeasts and develops at a controlled temperature of between 15 and 22 ºC. Afterwards, the wine is aged for 18 months on lees in old barrels and lastly bottled by gravity.
