Recanati Upper Galilee Merlot is a barrel-aged kosher red wine made with the Merlot red variety in the Galilee area (Israel) by the Recanati Winery.
Lenny Recanati and Uri Shaked founded the Recanati winery in 2000 with the aim of showcasing the qualities of the Israeli terroir. To do this, they use both local and international varieties that adapt very well to the Mediterranean climate. As a result, they make very elegant wines with a marked local character.
Recanati Upper Galilee Merlot comes from vines of the international Merlot variety. A grape that adapts perfectly to the local terroir and Mediterranean climate. They use traditional agriculture in the vineyard and the yield is very limited but highly concentrated.
When the Recanati Upper Galilee Merlot grapes have been harvested, they are taken to the winery first thing in the morning. They are destemmed and, without being crushed, they begin a short fermentation of 7-10 days. The wine then ages in French oak barrels. All of this work is carried out with supervision from a Jewish religious authority that means it can be labelled kosher wine.
