Prádio Mencía is a monovarietal Mencía wine produced by Fazenda Prádio in the area of Ribera Sacra.
Fazenda Prádio is a winery located in the Ourensian part of the Ribera Sacra. Their vineyards are on the slopes leading down to the Miño river. It is located in the abandoned village of O Pacio de Carracedo, in Peroza. It is at an altitude of 500 metres and has 5 hectares of vineyards surrounding the winery with a total of 10,000 strains of local varieties: Merenzao, Brancellao, Caiño Longo, Espadeiro, Sousón, Mencía, Loureira and Dona Branca. The vines are trained in double cordon royat, and they practice agriculture that respects the environment.
Prádio Mencía is fermented in small capacity winepresses and barrels, with manual punching and taking advantage of gravity whenever possible, all this in order to respect the grapes and wine as much as possible. No oenological product is added: no tannins, yeasts, lactic acid bacteria, etc. neither the acidity or the degree is corrected, etc. The wines go into clay vats or old barrels at the end to finish polishing them but not make them woody or add compounds that mask their aromas and flavour. Only sulphites are added before bottling to prevent further re-fermentations and microbiological alterations.
Prádio Mencía is a good example of a Mencía monovarietal that has not had any type of correction during its preparation.
