Pierre Peters Extra Brut GC is an extra brut champagne (only 2 g/L of sugar). Floral notes (hawthorn and honeysuckle) on the nose, evolving into fresh bread, toasted almonds and marine hints. On the palate it is balanced, with a firm and creamy entrance. Its flavours include white flowers, hazelnuts, fine citrus and toasted bread. The finish is very long, revealing the typical chalk of Le Mesnil sur Oger.

Pierre Peters Extra Brut GC comes from the village of Le Mesnil Sur Oger (in the south of the A.O.C. Champagne). This is a dry champagne made by Pierre Peters using the Chardonnay grapes grown in his grands crûs.

This family estate, which has been making wine for six generations, is located in the heart of the Côte de Blancs, in northwest France. This area, known all around the world, produces high quality grapes that have always ripened well but now, with climate change, they are better than ever. The secret: a combination of latitude (one of the highest in the world) and position (close enough to the sea to counteract the cloudiness and humidity of the Atlantic climate). However, these are not the only important factors. A key role is also played by the greda, the soft, nitrogen-rich soil that predominates in the area. Its special characteristics means it is able to conserve moisture and act as a humidifier for the vine, while its high nitrogen content is very useful for the yeasts during fermentation.

Winegrower Pierre Peters cultivates 19 hectares like this in the communes of Le Mesnil sur Oger, Oger, Avize and Cramant. Having been through a selection process, the family now grows vines with an average age of 30 years old in a completely manual and artisan way. During the harvest, the whole bunches are picked by hand and then carefully taken to the winery. However, the key point here is the press, where the crushing must be slow in order to create the best must of the highest quality to produce Pierre Peters Extra Brut GC, which will then ferment in small steel tanks at a controlled temperature.

Finally, the finishing touch comes when Pierre Peters Extra Brut GC is aged on lees. During this phase, the different batches will be tasted on a daily basis to later blend them and put different vintages together. After blending, Pierre Peters Extra Brut GC is bottled and stored in a cellar, where it is kept away from light and rests to ferment again. The final touch to shape the character of Pierre Peters Extra Brut GC is the disgorging (where the dead yeasts from the second fermentation are removed) and adding liqueur d'expedition (a mixture of wine and sugar to top up the amount lost during disgorging). This is the perfect champagne for palates that love strength and bitterness.
