Philippe Bornard Chardonnay En Go-Guette is a natural, organic, biodynamic and vegan sparkling white wine made in the AOC Arbois, in the French region of Jura. This sparkling Chardonnay is made by Philippe Bornard, and shows how good he is at making pétillent naturel style wines.
Philippe Bornard is actually one of the best-known producers of natural wines in this new, popular era for Jura wines. It all started when he inherited the family vineyards in the town of Pupillin, near the Swiss border, and decided to make his own wines instead of selling the grapes to other wineries. As a result, he produces a wide range of bright, vibrant wines with a beautiful aging potential. The winery is now run by his son Tony who has brought even more innovation with radical wines made with no additives.
Philippe Bornard Chardonnay En Go-Guette is made with organic and biodynamic grapes. All treatments are organic, avoiding all chemical products that could harm the natural balance of the terroir and the vine. The harvest begins early to ensure they have a raw material with plenty of acidity and not much sugar.
When the Philippe Bornard Chardonnay En Go-Guette grapes reach the winery, they are gently pressed and the resulting must is fermented at low temperature in stainless steel tanks with native yeasts. Before the fermentation is over, it is bottled so that it can generate its characteristic carbonic edge. It is bottled without being clarified, filtered or adding sulphites. Finally it is left to rest for several weeks in the cellar.
