Perelada Brut Rosé is a cava produced by the winery Castillo de Perelada in Perelada (Girona), D.O. Cava.
The winery Castillo de Perelada was founded in 1976, although the castle was acquired by the family in 1923. With the same style, it gathers a winemaking tradition that dates back to the Middle Ages.
Castillo de Perelada is a large and important winery. It produces a wide and complete range of wines, so its production facilities are an example of state-of-the-art winery technology. However, a large part of its work philosophy lies within the land, in the vineyards and in the vines. Therefore, Perelada has several plots of vineyards located in different areas, on different soils and microclimates within D.O. Empordà.
Currently, the winery exports to more than 56 countries, and produced in several denominations of origin in the Spanish territory.
Perelada Brut Rosé is a cava made from Red Grenache, Pinot Noir and Trepat, from vineyards under D.O. Cava.
Once the grapes are harvested and taken to the winery, they go through a soft maceration with their skins. Then, they fermented in stainless steel deposits, each variety separately. After the fermentation they carry out the coupage, and the wine is bottled for its second fermentation in the bottle. Here it will rest for a minimum of 12 months. After this time, they perform the disgorgement, and then they add the liqueur d'expédition.
