Pazo Señorans Selección de Añada is a white wine produced in the D.O. Rias Baixas by the Pazo Señorans winery. It is probably one of the best wines made from Albariño grapes.
The grapes used for the production of Pazo Señorans Selección de Añada come from old vines over 45 years old planted following the trellis system, so that the plant is protected from the soil moisture and has a great leaf surface area exposed to the sun.
The vineyard is planted about 300 meters above sea level, on poor sandy soil of decomposition of granite. The climate is an Atlantic climate, with mild temperatures and abundant rainfall.
The harvest is done manually in small plastic boxes that ensure an excellent condition of the grapes during their arrival at the winery. It undergoes a peculiar maceration of the grapes in order to obtain all the aromas before the fermentation, which takes place in stainless steel deposits at a controlled temperature of 18°C.
After the fermentation is completed, Pazo Señorans Selección de Añada is aged on its lees in stainless steel deposits for 30 months. Once bottled, it rests for at least 12 months before coming out on the market.
A wonderful albariño wine, ready to be consumed now or to be kept for the next 5 years, in which it will evolve in a very positive way.
