Pascal Cotat Les Monts Damnés is an organic white wine made from the Sauvignon Blanc variety, and produced by Pascal Cotat in the Sancerre region of France.
Pascal Cotat Les Monts Damnés is obtained from the highest plots found in Les Monts Damnés, "the damned mountains", so called because of how impressive and steep their slopes are and how difficult and heroic the work of harvesting in such a place.
This area is composed of "terres blanches": soils that are rich in fossils and silex and where calcareous and clayey components predominate, and which is considered one of the best places in the world for Sauvignon Blanc.
In order to produce his wines, Pascal harvests the bunches later than usual, encouraging the grapes to ripen to the extreme, picking them by hand and working according to the philosophy of organic agriculture and biodynamics. Pesticides are not used in his vineyards.
Pascal Cotat is guided by the lunar cycle when it comes to decanting his wines, which ferment with their native yeasts and age in demi-muids, large barrels. The wines are not filtered.
Pascal Cotat is one of Sancerre's main winemakers. His wines are considered long-lived gems of Sauvignon Blanc that defy time. Wines that are increasingly difficult to obtain. The opportunity to buy this Pascal Cotat Les Monts Damnés is not to be missed, and one whose reward will always make it worthwhile.
