Blanc de Pacs is a white wine from the Penedès, prepared by the Pares Balta family winery.

This winery, located in the municipality of Pacs del Penedès (Barcelona), is characterized by organic and biodynamic grape growing.

Blanc de Pacs is made from the three traditional varieties from Penedes: Xarel.lo, Parellada and Macabeo, from the Finca Les Torres at 616m in altitude, Finca Pares Balta, 254 m from the Finca Hisenda Miret, at 315 m.

For processing the must ferments at 16°C in stainless steel tanks for 2 weeks.

The blend of these three varieties creates a wine of great aromatic intensity and freshness.

Parés Baltà is the fulfilment of a dream of a saga of winegrowers and producers, the Cusiné family, in their eagerness to improve and create wines that capture and show the virtues of the best winegrowing areas of Penedès. Along with tradition and modernity, Parés Baltà is one of those family-run wineries that have a true passion for natural things. The cultivation of the vineyards, respectful towards the environment, is one of the maximum identity traits of this familiar winery. For this reason, their wines have an organic cultivation certificate and they are treated biodynamically by Demeter.

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.
