Produced by the winery Celler Pardas only in the best vintages and with the best grapes from the 2.69 ha property La Barraca. These vineyards were planted in 1996 with an average production of 3,000 Kg/ha. The blend and the barrels used depend on the characteristics of each year's fruit. Grapes are manually harvested and selected. After a separate maceration for a month approximatelly, the must undergoes an alcoholic fermentation in cement tanks coated with resin. The Cabernet Sauvignon undergoes the malolactic fermentation in barrels and the Cabernet Franc, in deposits. After that, the wine is aged in French oak barrels and lightly filtered before being bottled. Limited production of 2,030 bottles. An exceptional wine from the Penedès that is worth enjoying.

Celler Pardas has two proper names, Ramón Parera and Jordi Arnan, who join their knowledge in the land and in the wine. They settled in the municipality of Torrelavit to start cultivating the farm Finca Can Comas, with the aim of making great wines, full of pureness and in connection with the terroir of Penedés. They work with different local varieties that already existed in their farm, like the Monastrell and the Xarello, and in a very special way, with the red variety Sumoll. However, they also cultivate small amounts of other foreign varieties like the Cabernet Sauvignon, Cabernet Franc, Merlot and Marselan, among others.

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.
