Palliser Estate Sauvignon Blanc is a white wine aged on lees produced by the Palliser Estate New Zealand winery in Martinborough (Wellington) using the Sauvignon Blanc variety.
Palliser Estate is a New Zealand winery located in one of the most prestigious wine regions in the world. Founded in 1989, today there are 92 hectares of vineyards in Martinborough, south of Wairarapa. One of this country’s most prestigious brands with an international reputation, their wines can be found in the best establishments in the world.
Palliser Estate Sauvignon Blanc comes from vines planted in stony silt soils with different depths of ancient free-draining gravels. Lying on a small terrace at the southern tip of the North Island, the vines are subjected to a dry and windy climate and are cultivated using environmentally friendly methods.
The Palliser Estate Sauvignon Blanc grapes are cold pressed and the must rests for 2 days. Fermentation then takes place in stainless steel tanks at a controlled temperature. Finally, the wine rests on its lees to gain complexity and texture.
