Pago de los Capellanes Roble remains in a vat for 22 days. During this time, various battonages and pump overs are conducted to control the density, temperature and evolution of the yeast.
After this process, the containers are bled and thus, begins the malolactic fermentation at 20ºC that extends for a further 24 days.
Pago de los Capellanes Roble rests for 5 months in new French oak barrels being released on the market.
