Ònix Fusió is a red wine from the Priorat region produced by Vinícola del Priorat. This wine is a blend of 3 different grape varieties: garnacha tinta, syrah and cariñena.
The grapes used to make Ònix Fusió are grown on Llicorella soils. The harvest is carried out manually, using small boxes with a 15kg capacity to transport the grapes. These are used to ensure that the grapes do not break prematurely or lose their character on the way to the winery.
At the winery, they are placed in stainless steel tanks which have a 5,000 litre capacity, where a strict temperature is maintained. The grapes undergo cold maceration before alcoholic and malolactic fermentation take place. The final process is ageing the wine.
The 3 different grape varieties age for 4 months. The Syrah and Mazuelo grapes are aged in first year french oak barrels, while the Garnacha grapes stay in cold storage. Finally the wine is finally blended.
Vinícola del Priorat is a cooperative of 140 farmers who oversee and manage all phases of the wines production: the cultivation of the vineyards, growing of the grapes, the vinification process and marketing vineyards. The cooperative is now home to around 210 hectares of vineyards.
