Naverán Millesime Brut Nature is a cava from Cava made by Caves Naverán. It is a blend of Macabeo (40%), Parellada (30%), Chardonnay (20%) and Xarelo (10%).

The different varieties used for Naverán Millesime Brut Nature are processed autonomously. Thus, harvesting and grape pressing for each variety is done separately.

The four varieties then undergo a low temperature fermentation in stainless steel.

The final blend is produced in November. Tirage is performed subsequently and finally Naverán Millesime Brut Nature undergoes a second aging for at least two years in the bottle, thus following the "Méthode Champenoise".

Prior to being labelled and capped, Naverán Millesime Brut Nature passes through a rinsing and disgorging process.

Naveran is the surname of a family dedicated to the cultivation of their vineyards and the traditional production of their unique wines and cavas. Years ago, Michel Gillieron Parellada de Naveran, in his eagerness to innovate, planted some local varieties and some noble vines in his vineyards –Cabernet, Merlot, Chardonnay, Viognier, etc.–, with a vision of the future. Today, this has been well contrasted in time, revolutionising the wine production of Penedés in the 80s. As a result of this balance between tradition and innovation, Naveran and its wines, riding a wave, have won several awards and mentions in the most prestigious national and international competitions, including the one for its Cava ‘Perles Roses’ as the best Rosé Cava in Spain, according to Robert Parker from Wine Advocate.
Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
