Monte dall'Ora Valpolicella Classico Saseti is a biodynamic red wine made in the DOC Valpolicella Classico (Veneto) by Monte dall'Ora with the Corvina, Corvinone, Rondinella and Molinara varieties.
The Monte dall'Ora winery is run by Alessandra and Carlo Venturini, a couple that works to respect the grape, the terroir and the natural environment as much as possible. Located in Castellroto, a hilly area just outside Verona, they make their wines using biodynamic principles, cultivating native varieties and allowing the wine to ferment spontaneously. As a result, they create delicious wines that magnify the natural character of the terroir.
Monte dall'Ora Valpolicella Classico Saseti comes from a single vineyard planted in terraces and cultivated with the traditional Veronese pergola. The vines are grown using organic and biodynamic methods, working to protect the natural balance of each of the plants at all times. The harvest is manual, and carried out according to the different maturation times of each strain.
When the Monte dall'Ora Valpolicella Classico Saseti grape reaches the winery, it ferments in stainless steel tanks with native yeasts for 6 to 8 days. It then ages in stainless steel and cement tanks for three months. It is not filtered or refined before bottling.
