Ever since wine guru Robert Parker began to describe some wines as mineral in the 1980s, they have been growing in popularity. Achieving chalky and saline sensations in a wine is a mystery that very few can achieve. It is not that these wines literally contain minerals, instead, this description refers to the aromatic and flavour characteristics provided by the soil where the vines are planted. At El Jardí dels Sentits, the project run by Blanca Ozcáriz Raventós on the family estate in Penedès (Catalonia), she manages to produce natural wines with so much minerality that she even has a wine called Misteriós Xarel·lo.
On her Cal Almirall estate in Figuerola, planted by her great-great-grandparents (founders of the Lacrima Baccus winery), Misteriós Xarel·lo comes from small plots cultivated according to organic and biodynamic principles. A strip of only 0.5 hectares with old Xarel·lo vines that are 70 years old and enjoy a calcareous soil. The grapes are harvested by hand and the winery uses minimal intervention (<30mg/l of SO2), fermenting with native yeasts in stainless steel tanks and aging for 12 months in oak barrels.
