Milan Nestarec Forks and Knives White is a white wine aged on lees made in Moravia (Czech Republic) by Milan Nestarec with the native Müller Thurgau variety.

Milan Nestarec is a young winemaker who, after studying the art of making orange wines under Aleš Kristančič from Movia, decided to apply all his knowledge to his own personal project. A small winery with 8 hectares of vineyards spread across two Moravia towns 14 km from the border with northern Austria. He is a key member of “Authenticité”, a group of winemakers who champion the most natural expression of terroir, producing natural wines full of energy and vitality.

Milan Nestarec Forks and Knives White comes from vines with an average age of 15 years old, planted at 220 metres above sea level and on loess soils. He does not use herbicides on the plants, instead choosing to only use organic and biodynamic techniques. The yield is limited to 30 hl/ha in order to extract the maximum concentration from the berry. A traditional way of working that reaches its height in the harvest.

When the Milan Nestarec Forks and Knives White grapes reach the winery, they are destemmed and gently pressed. The must obtained is left in 2,500 litre stainless steel tanks where it ferments spontaneously with native yeasts for about 10 days. The skins remain in contact with the must for the first three days. Then half of the wine remains in the tank and the rest ages in used 225-litre oak barrels for 13 months. It is finally bottled without being filtered, refined or adding sulphur.

Sophisticated yet daring, Milan Nestarec Forks and Knives White is one of the most authentic examples of natural winemaking in central Europe. A kind of prodigy that is catching people’s attention.
