MicroBio Nieva York Rosado is a sparkling wine without denomination of origin produced by the winery MicroBio Wines in Nieva (Segovia).

MicroBio Wines is the persona project of Ismael Gozalo, who alongside Javier Zaccagnini created Ossian. Since 1998, Ismael makes his wines also outside the family winery, Viñedos de Nieva. He started making young wines, fresh and quite varietal, but he soon began to work with a bio or natural line of wines to enhance the personality of the variety and the soil, above all.

To produce these wines, Ismael has family pre-phylloxera and ungrafted vines. They are cultivated organically, but he does not want to be given this label. A large percentage of all the grapes is still sold to producers from the area, like Ossian itself.

MicroBio Nieva York Rosado is a sparkling rosé wine, petillant naturel (Pet Nat) made from Tempranillo and Verdejo from different vineyards in the area planted ungrafted on soils with siliceous sands and boulders.

The grapes used in this wine are the first ones of the harvest. After the manual harvest, they ferment with native yeasts at a low temperature and with low turbidity. The fermentation ends in the bottle with no added sulphites. After 9 months of ageing, the disgorgement is carried out to remove the lees and the bottle is filled with dry wine from the same batch.
