


Mestizaje Blanco is a young white wine from Terrerazo- having obtained its certification as Vino de Pago in 2010, the wine is prepared by the Mustiguillo cellar. It is a blend of Merseguera (60%), a poor indigenous variety, Viognier (35%) and Malvasia (5%).
The grapes used for Mestizaje Blanco come from Finca Calvestra, which is owned by the winery. The vineyards, which are located at more than 900 metres of altitude, are grown by organic viticulture with goblet and a trellis and occupy about 87 acres.
The vines were planted from 1999 and grow in loamy calcareous soils.
The harvest is done manually in boxes of 15 kilos so that the grains do not break. Here, as in the cellar, they undergo a sorting table before being destemmed and lightly crushed.
Mestizaje Blanco is then macerated cold for between 4 and 8 hours at a controlled temperature of 6°. The subsequent fermentation occurs with indigenous yeasts, between the 10th and 16th.
Mestizaje Blanco is finally aged on its lees in stainless steel tanks for about 8 months.
The Mustiguillo winery is singular and unique. The specificity of their wines meant that they were recognized as 'wines of the countryside'.
The workers from winery wish to make the Merseguera an important grape in the Spanish wine scene due to its distinctive traits.
