Matsu is a red wine from Toro produced by the Matsu winery. The winery is located in the region of Toro (Zamora) and is owned by Vintae group.

Matsu El Viejo is 100% made from Tinta de Toro. The grapes come from ancient vineyards planted on very low production soils of sandstone and clay at about 650-700m altitude.

The cultivation of the vineyard seeks not to interfere with the natural processes of the vineyard, using biodynamic farming methods.

For processing, the wine is fermented and macerated for three weeks in concrete tanks of 10,000kg. Afterwards malolactic fermentation occurs in new French oak barrels. In the same barrels, the wine is aged for 16 months.

Matsu is Japanese for "hope". The wines from the Matsu collection are the result of waiting, waiting for nature to fulfil its cycles without forcing it, and waiting for the wine to develop its qualities spontaneously.

In Japanese, Matsu means ‘to wait’. A concept that perfectly defines the philosophy of the winery: to wait for the grapes to ripen, to wait for nature to do its work, for the wine to mark the pace.
Using century-old vines, between 80 and 100 years old, planted on very poor soils, cultivated according to the principles of biodynamic agriculture, and with the minimum possible intervention, the Matsu winery produces powerful wines, with personality, but providing a softness and elegance unusual in Toro wines.
In Toro, the red wines are mainly made with the Tinta de Toro grape variety, planted on soils of fluvial origin by the influence of the Duero River and its tributaries, grown on poor, sandy and dry soils the further away you move from the river. Toro offers powerful wines, well bodied, flavourful, complex, and tannic. Although on a smaller scale, the region also produces white wines using the Verdejo and Malvasía varieties. Since the ´80’s, Toro has experienced a revival in its wines, thanks to a new generation of highly skilled winemakers and the installation of many big names in the region, such as Pintia, a winery belonging to the Vega Sicília group, or Teso la Monja, part of Sierra Cantabria.
