In Japanese, Matsu means ‘to wait’. A concept that perfectly defines the philosophy of the winery: to wait for the grapes to ripen, to wait for nature to do its work, for the wine to mark the pace.
Using century-old vines, between 80 and 100 years old, planted on very poor soils, cultivated according to the principles of biodynamic agriculture, and with the minimum possible intervention, the Matsu winery produces powerful wines, with personality, but providing a softness and elegance unusual in Toro wines.
