

Terrazas de Serapia is a red wine, D.O. Vinos de Madrid, produced by the winery Máquina & Tabla, in Sierra de Gredos.
Máquina & Tabla is a project that began in 2012 thanks to Oriol Illa and Susana Pastor. Starting from scratch, they visited the entire region, searching for the best vineyards, the oldest ones.
Máquina & Tabla cultivates the vines using biodynamic parameters, with utmost respect for the land and nature. They make top-quality wines with minimum intervention, in rented facilities, as of right now.
It seems like hard work is paying off: Máquina & Tabla normally appears in the best positions of specialised magazine rankings.
Terrazas de Serapia is a wine made from Grenache from a plot near the village of Navarrevisca, in Sierra de Gredos, planted at around 900 metres above sea level, on sandy and granitic soils.
After the manual harvest, the grapes are destemmed so they can ferment with native yeasts at a low temperature for several weeks. Before the fermentation starts, they go through cold maceration for three days. This wine is aged in 600-litre French oak barrels and cement deposits for 12 months. This wine is bottled without clarifying or filtering.
Terrazas de Serapia is a mature and rustic wine with a fresh finish. The aromas of ripe red fruit stand out, with light spicy notes. In the mouth, it is soft and enveloping.
