

Páramos de Nicasia is a red wine from the Toro region produced by the Màquina & Tabla winery. It is made using Tinta de Toro grapes.
The grapes used for Páramos de Nicasia come from vineyards that are ungrafted and around 80 years old. The vineyards occupy 3 hectares of land and the soils that contain boulders.
The harvest takes place once the grapes have achieved optimal ripeness. At the winery, the grapes first go through a selection process. Then, fermentation takes place using indingenous yeasts followed by a long maceration. Throughout the vinification process there is no addition of sulpherous acids. After the vinificaiton process, the wine is aged.
Páramos de Nicasia is aged for 12 months in oak barrels that have a 600 litre capacity. Following this, the wine is bottled, with only 5,500 bottles of Páramos de Nicasia being produced.
The Màquina & Tabla winery was founded in 2012. After a careful selection of the best vineyards in Castilla y León, it started to produce real quality wines, which everytime receive acclaim from wine critics
