Páramos de Nicasia Rosado is a biodynamic rosé wine made with the Garnacha Tinta, Tinta de Toro and Malvasía varieties produced by the Máquina & tabla winery in the D.O. Toro.
Máquina & tabla is part of a personal project that Oriol Illa and Susana Pastor have been working on since 2012, travelling through Spain’s wine regions like Rueda, Ribera del Duero and Toro. Starting from very old vines, local varieties and forgotten terroirs, they use a traditional cultivation system based on minimal intervention to display the individual characteristics of each of the regions.
Páramos de Nicasia Rosado comes from 2 hectares of vineyards that are about 50 years old and planted on sandy and clay-limestone soil. These are forgotten plots that have not been touched by any new technology, there are no fences or irrigation systems and they are allowed to grow using traditional cultivation and biodynamic methods (Demeter certified).
Páramos de Nicasia Rosado is vinified with all the red and white varieties together without any additives at normally low temperatures, for more than 6 weeks. It then ages in the barrel for 6 months. When the wine is ready, it is bottled without filtering or clarifying.
With a production of only 7,500 bottles Páramos de Nicasia Rosado is a seductive and very intense biodynamic rosé wine, the direct result of minimal intervention.
