Máquina & Tabla Nicasia is a biodynamic red wine made in the D.O. Toro by the young Máquina & Tabla winery with the red Garnacha variety.

The Máquina & Tabla winery was set up by winemaker Oriol Illa and artist Susana Pastor. Having sought out forgotten vineyards and keen to use natural winemaking methods, they make wines in Bierzo, Rueda, Toro and Gredos. These are unique locations that are ideal for small, biodynamic productions.

Máquina & Tabla Nicasia comes from old vineyards recovered from an 8 hectare El Pasiego vineyard. These are strains planted in sandy and granitic soil at an altitude of over 1,000 metres above sea level. They use organic agriculture and biodynamic treatments that respect the natural balance of the terroir and the strain.

When the Máquina & Tabla Nicasia grapes reach the winery, they are pressed whole. The must macerates with skins for 2 weeks and fermentation occurs spontaneously with native yeasts. It then finally ages for 10 months in oak foudres.

Máquina & Tabla Nicasia is a moorland red wine that is made through a commitment to responsible agriculture and non-interventionist practices in the winery.

In Toro, the red wines are mainly made with the Tinta de Toro grape variety, planted on soils of fluvial origin by the influence of the Duero River and its tributaries, grown on poor, sandy and dry soils the further away you move from the river. Toro offers powerful wines, well bodied, flavourful, complex, and tannic. Although on a smaller scale, the region also produces white wines using the Verdejo and Malvasía varieties. Since the ´80’s, Toro has experienced a revival in its wines, thanks to a new generation of highly skilled winemakers and the installation of many big names in the region, such as Pintia, a winery belonging to the Vega Sicília group, or Teso la Monja, part of Sierra Cantabria.
