Manzanilla La Gitana is a manzanilla (a type of wine similar to sherry) aperitif wine produced in Sanlúcar de Barrameda by Bodegas Hidalgo-La Gitana.
Manzanilla La Gitana is made from Palomino Fino grapes produced at a vineyard in Balbáina y Miraflores.
A must is obtained from these grapes that will later pass through the Solera ageing process. It ages in American oak casks for at least five years.
This type of wine is produced in a manner similar to sherry, the only difference being that the thick film of yeast that forms when the wine ages in casks (which in sherry production disappears twice a year) is maintained year-round. This difference is due to the unique weather conditions of Sanlúcar de Barrameda, the area where manzanilla is produced.
