Dominio de Atauta is a relatively new project. Since the beginning, its aim has been to express all the character of the Valley of Atauta, at 1,000 metres of altitude, in the province of Soria. Here, some of their wines are made from pre-phylloxera vineyards of Tinto Fino and some others from vines that are over 85 years old. Relying on this phyolosphy and adding an excellent human factor to the unique conditions of the terroir, the wines from Dominio de Atauta have managed to place themselves among the most renowned ones, within an outstanding Denomination of Origin like Ribera del Duero.

At 1,000 metres of altitude in the town of Atauta, Soria, their is a unique valley that is a true oenological and ethnographic gem. This small valley is located at the start of D. O. Ribera del Duero, 50 km away from the source of the river Duero in the province of Soria. This valley is quite eroded so, although it is small (4 km long and 1 km wide) it has a great variety of soils, both in their composition and the depth available for the plant, depending on whether it is in a valley area, the moorland or a hillside: The feature that is common to all the soils is the calcareous rock, in the deepest layers, that provides minerality to the grapes and prevents the roots from growing even deeper.

In this unique enclave we can find the project of Dominio de Atauta. Its aim is to reflect in their wines all the particularities that the Tinto Fino variety can offer. These pre-phylloxera vines are over a century old. Bodegas Dominio de Atauta benefits from the tradition of a valley that has over five centuries of vinegrowing heritage. It has extreme conditions, both for its altitude and its climate with scarce rainfall and great temperature variations. The altitude of the valley is actually one of the most characteristic elements. Among other things, it allows the grapes to ripen slowly, in a harmonious and balanced way. On another note, the wind that constantly runs through the valley, from west to east, contributed to the lower humidity of the vines, thus helping to prevent diseases. The orographic conditions of the valley, along with the climate conditions of the area —scarce rainfall, low average temperatures and great temperature variations between day and night in the grapes ripening months— are ideal factors for the cultivation of vines and the ripening of the grapes.

Based on these elements, the philosophy of Bodegas Dominio de Atauta since the beginning has been to care for the fruit yielded in the vineyard along the entire growth cycle, with exceptional quality, and carry out a careful intervention in the winery.

 

History of the winery

Dominio de Atauta was created in 2000. It is located on the road to Morcuera, near Atauta, province of Soria. The winery, which is part of AvanteSelecta, makes wines in 9 wineries of the main Spanish Denominations of Origin. In these surroundings, the vines coexist with holmoaks and oak trees, with aromatic herbs like thyme and rosemary, orchards, boletus and animals like hares, partridges, roe deer and wild boar. It is also quite frequent to see vultures and eagles in an ecosystem that will eventually be transferred to the vine, basically due to the interaction of all the elements.

The winery has 15 hectares of own vineyards and 30 hectares of controlled vineyards. Years of experience and work in the area have enabled them to learn about the more than 500 micro-plots, which are then treated individually, with maximum respect for their essence and nature. The vineyards from Dominio de Atauta are pre-phylloxera and they are around a century and a half old. In any case, the vines are always above 85 years old. The vineyard is planted in vase-shape, as they used to do traditionally in the area. This kind of vine training also allows the plant to better withstand the scarce rainfall (430 mm/year). The old age of the vines, the poor, shallow soils, and the careful work they carry out in the vineyards, all result in a very small production of a maximum of approximately 2,500 kg of grapes per hectare. This means that each vine yields an amount less than the one necessary for a 0.75 l bottle.

The winery has deposits made of different materials and of various capacities to adjust to the needs of each type of grape. Among these materials we can find wooden vats, concrete and stainless steel deposits, with sizes ranging from 1,000 to 10,000 litres. All the ageing is carried out in French oak barrels of different sizes and from different cooperages. In general, the winery applies up to 6 years in barrels, renovating 20% of them each year, according to the characteristics of the harvest. The barrel stock includes 620 barrels.

On the other hand, Dominio de Atauta collaborates with another winery, Atalayas del Golbán, located 7 km away from San Esteban de Gormaz (Soria). Here they make their wines Viridiana, Torre de Golbán Crianza and Torre de Golbán Reserva. Their aim is to make wines that are committed to the style of Ribera del Duero, adding a hint of character and the personality given by the privileged are where they are, quite close to the exceptional Valley of Atauta. Here, in the areas that are closest to the Valley of Atauta, in the towns of San Esteban de Gormaz, Miño, Ines, Soto and Langa, they have 40 hectares of controlled vineyards of Tinto Fino, with an age from 60 to 80 years. These vines are cultivated in vase-shape, on mixed soils of sands and calcareous clays with boulders. The winery has fermentation deposits (stainless steel, wood, cement, etc.) and around 700 French oak barrels of 225 litres of capacity, ranging from 0 to 6 years of use. They renovate 25% of the barrel stock each year.

 

Work philosophy

Their philosophy of a careful intervention in the winery is applied from the fermentation until the wines are made. They always seek natural fermentations without cold stabilisation, and they apply soft filtering that is respectful with their excellent raw material. Added to all the factors that define the terroir —climate, soils, variety and age of the vineyards— is the human factor, an essential elements for the production of the wines from Dominio de Atauta.

The prevailing variety is the Tinto Fino, which is how the Tempranillo is known in Ribera del Duero. Dominio de Atauta performs a viticulture where they only use organic products that are respectful with the environment, and all their work is carried out in the most sustainable way possible. All the vineyard tasks are done by hand, since the narrow plantation frame (1.7x1.7) prevents any machinery from entering. Soil treatments are entirely natural. Only animal and plant compost are used.

 

Wines from Dominio de Atauta

Parada de Atauta
is made 100% with Tinto Fino and it is aged for 12 months in French 225-litre barrels, 50% of them new. The wine is made from a selection of very old vineyards. They search for vines planted on sandy soils with boulders, which provide a better ripening and greater fruit intensity. It is made in concrete and stainless steel deposits. The malolactic fermentation takes lace in wooden vats, and then it is transferred to barrels. This wine shows the concentration, complexity and potential of the grapes and vineyards of the Valley of Atauta, without ceasing to be a wine suitable for all.

Dominio de Atauta is a varietal wine of Tinto Fino with an ageing of 16 months in French oak barrels, 40% new and 60% used. This wine is made with the aim of showing the concentration, complexity and potential of the grapes and vineyards of this area. This wine speaks for itself. It shows a great potential and intensity, with a long and fresh finish. You can find the typical aromas of the garrigue, rosemary and lavender, alongside ripe black forest fruit and spicy notes. The mid-palate is round and soft at the same time, accompanied by fine grainy tannins that are well integrated and ripe. Ample and long. It has a good acidity and balance, with quite a mineral finish.

La Mala is made 100% with Tinto Fino and it is aged for 18 months in 100% oak barrels (50% new and 50% used). It is one of the three ‘vinos de pago’ (single-vineyard wines) made by the winery. It shows the personality of a vineyard located in the Valley of Atauta, with a depth of only 0.7 m to the calcareous rock. Due to this low depth, the yield of each vine is extremely low. This factor, along with the special characteristics of the soil, result in one of the most interesting wines of the winery. The plot specifically takes the name of the low production of its vines. In the past it was considered unprofitable and they called it ‘La Mala’ (the bad one). A fragrant wine, with a great diversity of aromas of aromatic plants like lavender, rosemary, chamomile, combined with ripe red and black forest fruit, and light notes of coffee and spices. The mid-palate is fragrant and soft, all accompanied by a texture of a fine grainy tannin. Good acidity and balance.

Valdegatiles is also made 100% with Tinto Fino. It is aged for 18 months in barrels made 100% of French oak. It is one of the single-vineyard wines, ‘vinos de pago’ that represents all the potential of a plot with a deeper soil (1.6 metres to the calcareous rock). It is the plot that is richest in clay. Both the composition of the soil and its depth make Valdegatiles a wine with great structure and power, without losing the elegance characteristic of the area. Aromatic power and intensity, notes of ripe red and black fruit with touches of tobacco and leather. The mid-palate is intense, more predominant in the middle of the palate, dominated by grainy tannings and nuances of ripe forest fruit. Balanced and long.

Llanos del Almendro is made 100% with Tinto Fino. It is aged for 18 months in barrels made 100% of French oak. It is one of the single-vineyard wines made with grapes from a small plot located in the Valley of Atauta. Its main feature is the sandy soil with boulders on the surface. This poor sandy soil with the elevated temperature it accumulates thanks to the boulders, enable the grapes to ripen slowly and achieve a greater complexity of aromas and tastes. A powerful and incredibly complex wine. A blend of aromas and tastes of ripe red and black fores fruit, combined with balsamic notes of black liquorice and notes of bitter almonds. In the mouth, it is long and it develops amplitude, generating a layer of very fine, grainy tannins.


Wines from Atalayas de Golbán

Viridiana is a wine made with 100% Tempranillo aged for 3 months in new 100% French oak barrels. It is a young wine with a short ageing that completes the classic range of Crianza and Reserva wines. The selection of the vineyards is based mainly on the fruit intensity and the balance in the mouth. Aromas of forest fruit intertwined with spicy notes. In the mouth, it is light and fresh, with tastes of red fruit and a soft mid-palate. It is a young, lively wine that is easy to drink.

Torre de Golbán Crianza is also a varietal of Tempranillo from vineyards that are between 60 and 80 years old. This wine is aged for 12 months in French oak barrels (30% in new barrels). It is a crianza wine in the style of Ribera del Duero, but with great personality thanks to the grapes used in its production, which come from vines that are planted at more than 900 metres of altitude on calcareous sand soils with boulders from the valley. Intense, elegant and lively, with aromas of ripe red and black fruit, with notes of liquorice and sweet spices. In the mouth, it is a perfectly balanced and round wine. This wine is fruit, juicy and it ends with a very fresh acidity.

Torre de Golbán Reserva is made 100% with Tempranillo, with an ageing of 18 months in new French oak barrels (30% new). This wine shows the virtues of the Tinto Fino, a classic clone of Tempranillo cultivated in Ribera del Duero: elegance, finesse and a long ageing. A wine with deep and complex aromas, with notes of ripe black fruit combined with notes of coffee. In the mouth, it is round, balsamic and long, with a silky texture.
