Manar dos Seixas is a white wine produced by Gallina de Piel Wines, D.O. Ribeiro.

Gallina de Piel Wines is the personal project of David Seijas, sommelier at the El Bulli restaurant for 13 years. With this project, David Seijas aims to bring wine closer to people from the sommelier’s point of view, enhancing different styles and profiles, and seeking the character and personality of the place where they come from.

David makes his wines together with the best producers, selecting the best vineyards and local grapes. He currently produces two wines, one in Empordá and the other in Valdeorras, two very special areas for him. Galicia, where he has his family roots, and the Empordà, where he has lived his best years as a sommelier in El Bulli.

Manar dos Seixas is a wine made with Treixadura and a small amount of Godello, Albariño and Loureiro Blanco from vineyards located in the Miño valley, planted on deep granitic soils with a loamy-sandy texture on the surface.

After the harvest, the grapes go through cold pre-fermentation maceration and then they are fermented in 5000-litre stainless steel deposits at a controlled temperature. Once the fermentation has ended, the wine ages on its fine lees for 6-8 months in the same deposits.

This Denomination of Origin occupies part of the beautiful valleys of the rivers Sil and Jares in the Northeast of the province of Orense.
Vineyards line the slopes of the mountains that frame the river valleys and at the bottom of them, occupying floors slate of very good physical condition and adequate fertility, sometimes on steep slopes.
The variety of higher quality and prestige, among whites, is the Godello, white wine grape that provides very fine fruity and floral aroma and excellent structure in the mouth. Next to this is the providing variety Tinta Mencia reds, purple, intense and elegant aroma and soft fleshy fruit not without its nerve.
