Majuelo del Chiviritero is an ecological barrel aged white wine made from the Verdejo variety by Isaac Cantalapiedra in the V.T. Castilla-León (Spain).

This family project was set up in the heart of Rueda, the leading denomination of the Verdejo variety. There, Isaac Cantalapiedra and his son Manuel decided to continue with the family winemaking tradition with a project that showcases the variety and the terroir both in the vineyard and in the winery. This leads them to making authentic wines that are unlike the trends that most neighbouring producers follow.

Majuelo del Chiviritero comes from “El Chiviritero”, a plot that lies 750 metres above sea level with the region’s typical soil of boulders and layers of clay and limestone. These strains have an average age of 39 years old and are cultivated according to biodynamic principles to help maintain the natural balance of the ecosystem and prevent possible diseases. The harvest is carried out by hand in 15 kilo boxes.

When the Verdejo grape reaches the winery, the Majuelo del Chiviritero winemaking process begins in used French oak barrels. It involves spontaneous fermentation with native yeasts without temperature control for 45 days. Then the wine ages on lees, with no battonage for 9-10 months. Finally, it is bottled in daylight with light clarification, filtration and sulphite.
