Los Loros Fermentado en Barrica is a white wine made by Juan Fco Fariña Pérez in Tenerife, Canary Islands using the Gual and Marmajuelo native varieties.
Juan Fco Fariña Pérez is a winery located in the Güímar valley (Santa Cruz de Tenerife) that used to produce wines in bulk, but when the new generation of the family took over in 1999, they began producing bottled wines. These are made from their own vineyards using the island’s native varieties like Listán, Gual, Marmajuelo, Vijariego and Albillo.
Los Loros Fermentado en Barrica comes from small plots that lie at different altitudes up to 800 metres above sea level and with varied soils: sandy, clayey and stony. They are all cultivated using agriculture that is respectful to the environment and the harvest is carried out manually in 15 kg boxes when the grapes reach optimum ripeness.
In the winery, the Los Loros Fermentado in Barrica grape is selected, destemmed and gently pressed in a pneumatic press. Then the must obtained is fermented in stainless steel tanks for a few days. It then rests in barrels for 5 months with its lees and is riddled once a week. Finally it is bottled with a slight clarification and filtering with clays.
