Characteristics Le Temps Fait Tout
Le Temps Fait Tout is a natural red wine coupage with 50% Cariñena and the rest of Grenache and Syrah in equal parts. It is a wine from the Languedoc-Roussillon area, and is produced by Rémi Poujol.
Rémi Poujol is a young winemaker who dislikes chemistry or oenological products. He work with grapes and nothing but grapes!
The soils of the vineyards for Le Temps Fait Tout are clayey-limestone with boulders. The Cariñena is 30 and 60 years old and is exposed to the south, the Syrah is 30 years old and is exposed to the south and southeast and the Grenache is 30 years old and is oriented to the southeast.
To produce Le Temps Fait Tout the Grenache harvest is vatted whole, without destemming; the Syrah grapes are destemmed completely, and only half of the Cariñena grapes are destemmed. they are all fermented with native yeasts and without added sulphites in fibreglass tanks and are pumped over daily to extract colour and aromas from the skins.
Le Temps Fait Tout is a fruity and meaty young wine that seeks to be the natural expression of the vinified varieties and the territory from which they come.
