Le Temps Fait Tout Blanc is a natural, organic and vegan white wine, made on lees by Remí Poujol with the Clairette and Ugni Blanc varieties in the French region of Languedoc-Roussillon (Vin de France).
Rémi Poujol is a young viticulturist who is committed to making wines without using oenological additives. A true artisan winemaker who works with his two horses on the 10 hectares he owns in the Vallée de l'Hérault. These are old vineyards planted with native varieties, growing healthy and high-quality grapes that are then vinified using minimal intervention.
Le Temps Fait Tout Blanc comes from 0.5 hectares of old vines that are planted on volcanic soil with a high quantity of calcareous clay and silica. The vineyard has been organic since 2002, with no chemical products used. Organic and biodynamic treatments are used instead. The harvest is manual and the grapes are selected in the vineyard itself.
In the winery, the Le Temps Fait Tout Blanc grapes are pressed directly without destemming. Then the resulting must ferments spontaneously with native yeasts and without added sulphur. Finally, it ages in stainless steel tanks and fibreglass tanks with its fine lees for 10 months.
