Le Petit Gimios Rouge de Causse is a red wine made from Cariñena, and other red varieties. It is produced by Le Petit Domaine de Gimios.
Le Petit Domaine de Gimios is a winery located in Saint-Jean-de-Minervois, in the department of Hérault. The winery was founded in 1993 by Anne-Marie Lavaysse, who set out to recover several abandoned vineyards in the area. At the moment it cultivates some 16 plots of native varieties that amount to a total of about 5 hectares of vineyards. They are located about 320 metres above sea level on rocky and calcareous soils and are cultivated biodynamically and without using sulfur, copper or chemical fertilizers. To protect the vines, they are treated with herbal infusions.
The wines are produced mainly with Cariñena. The yields of Le Petit Gimios Rouge de Causse are always very low, from 10 to 14 hectolitres per hectare and the harvest is always carried out manually. In the winery, the bunches are destemmed and pressed in the old style by treading on them with the feet. The must is vinified with native yeasts in steel tanks, and macerates with the skins for about 10 days. The wine is bottled a month after fermentation ends.
Le Petit Domaine de Gimios does not use sulphur because it wants its wines to provide the sensation of chewing fruit when tasted.
