Las Quintas is a red wine made with the Mencía, Alicante Bouschet and Palomino varieties produced by Fuentes del Silencio, a new winery set up in 2013 in the VT Castila-León.

Fuentes del Silencio is located in Herreros de Jamuz, in the south of León (Castilla-León). This is a project run by winemaker Marta Ramos and guided by the renowned Raúl Pérez. Starting with a focus on respectful and integrated viticulture, they work to revive native Leon varieties using ancient techniques. 

Las Quintas comes from centuries-old vines planted in small plots at 800 metres above sea level, in poor soils, with silty-sandy loam and lots of stone. They use respectful agriculture and avoid synthetic chemicals. The harvest is carried out manually in 15 kilogram boxes, where the grapes are selected.

With the grapes partially de-stemmed, they are placed into foudres box by box with minimal sulphur. Las Quintas ferments there with native yeasts, macerates for 45 days and is gently pressed. Finally, it is aged in large French oak barrels for 12 months.

Las Quintas is a red wine that comes from the winery’s highest and freshest vineyards. A collection of micro-plots with an exceptional biodiversity that provides great expression and authenticity.
