Lapola is a white wine coupage made with the Godello and Doña Blanca varieties by the Dominio do Bibei winery in the D.O. Ribeira Sacra, Galicia.

Dominio do Bibei is an interesting personal project of María Prieto and Javier Domínguez in the Ribeira Sacra. They seek to understand, hear and interpret the vine, the climate and the vineyard to create a harmony that results in sensitive wines that reflect the terroir at the same time as being delicate and elegant.

The grapes used to make Lapola come from vineyards with slate soils that are aged between 15 and 80 years old and harvested manually in 10 kg boxes. Strains that grow in vintage, hard-to-cultivate fields but that produce high quality fruit.

There are two selection processes: one in the vineyard and one in the winery. Fermentation takes place in concrete tanks and wooden foudres. The resulting wine is aged for 10 months with its fine lees in French and Austrian oak barrels. The wine is bottled without stabilising or filtering and then spends some time in the winery before being sold.

Ribeira Sacra is one of those magical places that you just have to visit to truly experience it. The vertiginous terraces rise steep on the banks of the river Sil, making the terrain difficult to work on that it requires complete manual work and labor on the vineyards. The agriculture carried out here is aptly referred to as ‘heroic agriculture’, due to the hard work carried out cultivating the land. Both red and white wines are produced in the Ribeira Sacra. The red wines are mostly made with the Mencía variety, defined by their expressive and elegant character with a good acidity. The Ribeira Sacra white wines are principally made with the Godello and Albariño varieties. They are wines with a good volume in the mouth, aromatic and fruity. The Ribeira Sacra wines are often come in very limited productions, are of high quality and with notable personalities.
