La Bota de Amontillado 95 is a fortified wine with notes of candied sweet potato and pumpkin, scrubland and caramel on the nose. On the palate it is pleasant and flavoursome, very long and very dry. A beautifully complex Amontillado that hardly loses any freshness.

La Bota de Amontillado 95 is an Amontillado fortified wine made with the Palomino variety by the Equipo Navazos winery in the D.O. Jerez- Xérèz-Sherry, in Andalusia, Spain.

 

 

Equipo Navazos is run by Eduardo Ojeda and Jesús Barquín, two great lovers of Andalusian fortified wines. The project was started with the aim of recovering interesting oenological gems found in old casks in wineries or in the houses of some artisan producers, to bring them out and introduce them to the world.

 

La Bota de Amontillado 95 came from a set of old barrels from the Hijos de Rainera Pérez Marín winery, in Sanlúcar de Barrameda, which were identified as Manzanilla Pasada, Manzanilla Pasada Vieja and Manzanilla Pasada Viejísima, biologically-aged fortified wines made with the Palomino variety.

 

Equipo Navazos set about meticulously identifying and selecting the casks to create an Amontillado Solera, a fortified wine that combines two types of aging: biological, under a yeast cap and oxidative, in a barrel and without a yeast cap. This Solera was refreshed with a true unfortified Manzanilla Pasada, resulting in La bota de Amontillado 37 “Navazos.”

 

The leftover wine is aged again for seven years to create La Bota de Amontillado 95, an Amontillado with an approximate age of 25 years old and that reveals a beautiful complexity almost without losing any freshness.

Sherry and wines from Jerez are probably Spain’s biggest contribution to the world of wine. Unique and special, there is nothing else like them in the world. A great diversity of Sherry wine is produced in DO Jerez-Sherry-Manzanilla de Sanlúcar, everything from sweet wines to fortified wines. Sweet wines are divided between Pedro Ximénez and Moscatel, depending on the variety used during production. Concerning fortified wines, there is a large range including Finos, Amontillado, Manzanilla, Oloroso, Medium, Cream and Palo Cortado, classified depending on the result of the ageing process under the ´velo flor´. A unique trait of these wines is the ageing process using the Solera Method, a system using various barrels from different vintages. The system uses stacked barrels, where a portion of a barrel’s contents is extracted and mixed with the lower barrel, with the barrel then filled with the contents of the upper barrel. Thus, the new wine is gradually coming to be thanks to the age of the rest of the content of screeds.
