Julien Guillot Mâcon Chardonnay Clos Fourneau is a natural, biodynamic and organic, barrel-aged white wine made by Clos des Vignes du Mayne with the Chardonnay and Pinot Gris varieties in the AOC Mâcon-Villages denomination, in Burgundy.
In 1952 the Guillot family acquired a Domain that had been cultivated by Benedictine monks since 910. These are exceptional terroirs where chemicals have never been used. The Guillot family went a few steps further by making all their vineyards ecological and then biodynamic. The winery is now run by the third generation, Julien Guillot, who has turned Clos des Vignes du Mayne into one of the best natural wine producers in southern France.
Julien Guillot Mâcon Chardonnay Clos Fourneau comes from a 40 hectare Clos with shallow soil near the village of Chardonnay. These vines were planted in 2011 on high slopes in clay and limestone soil. They are cultivated using organic agriculture with biodynamic treatments and the harvest is carried out manually with the grapes selected in the vineyard.
In the winery, the Julien Guillot Mâcon Chardonnay Clos Fourneau grapes are vinified separately. Firstly, they are gently pressed and then they ferment spontaneously with native yeasts. The wine is then aged on its lees for 12 months in used French oak barrels and is finally bottled without filtering, clarifying or adding sulphur.
Julien Guillot Mâcon Chardonnay Clos Fourneau is a cuvée with a strong personality. A powerful white wine with a mature profile and abundant fruit and mineral aromas.
