When Emmanuel Lassaigne took over Jacques Lassaigne, the family estate with 4.5 hectares of vineyards, he discovered all the potential of the calcareous hill in Montgueux and began to work his terroirs with great care and determination. As a result, he created authentic sparkling wines that were very delicate and mineral.
Jacques Lassaigne Les Papilles Insolites comes from a small vineyard planted with 35-year-old vines in calcareous soils. Organic agriculture is used, without any chemicals that could affect the delicate natural balance of the vine and the terroir. The yield is limited to produce higher quality grapes and the harvest is carried out manually at the optimal point of ripeness.
In the winery, Jacques Lassaigne Les Papilles Insolites vinifies with minimal intervention. It is first gently pressed and then fermented in stainless steel tanks with native yeasts and used wooden barrels. Having spent time stacked in peace, it is finally manually disgorged without adding sulphur.
