Henri & Gilles Buisson Saint-Romain Sous le Château is a biodynamic white wine made by Henri & Gilles Buisson with the Chardonnay variety in Burgundy (France).

The Buisson family have been winegrowers in the town of Saint Romain, in the Cote d'Or itself since the 12th century. Then in 1947, Henri and Marguerite Buisson decided to make their own wines. Now, their son Gilles is carrying the legacy, working 19 hectares in line with organic and biodynamic principles. Thanks to the local weather and the geology, the Buissom family create wines that express the terroir and are exceptional value for money.

Henri & Gilles Buisson Saint-Romain Sous le Château comes from 40-year-old vines planted in loamy clay soil. They are cultivated using biodynamic agriculture without irrigation, pesticides or herbicides. And the strain yield is limited to obtain maximum berry concentration. The harvest is carried out manually at the optimum point of ripeness.

When the grapes have been selected in the vineyard and cellar, the Henri & Gilles Buisson Saint-Romain Sous le Château winemaking process begins. Firstly, 50% of the harvest is destemmed and then all the grapes are gently pressed. The resulting must ferments with native yeasts at a controlled temperature and finally the wine ages for 12 months in French oak barrels, only 10% of which are new.

Like everything made by this winery, Henri & Gilles Buisson Saint-Romain Sous le Château is a pleasant white wine with the character and personality of the Beaune region, Burgundy.
