Hacienda Monasterio Reserva Especial is a blend of 2 types of grape, Tinto Fino, a typical variety from Ribera del Duero, plus a small percentage of Cabernet Sauvignon.

The grapes used to make this wine come from the Hacienda Monasterio estate, which is located in the Douro Valley in the Golden Mile of the Ribera del Duero, an area of ​​just over 100 kilometers along the Douro River where there are countless wineries. The Hacienda Monasterio estate is located on a slope and covers an area of ​​160 hectares, 78 of which are used by vines. The soil is mostly chalky, which results in a finesse and elegance in the wines.

Hacienda Monasterio ensures that produce their wines in an ecological manner which is respectful to the environment, and are certified by the CAECIL (Ecological Agriculture Council Castilla y León). No herbicides, pesticides nor chemical fertilizers are used on the vineyards. The fertilizer that used is an organic fertilizer, that is made from residues coming from the plant itself and sheep manure.

The harvest of the grapes is carried out manually, they are then transported to the winery in small plastic boxes that ensure that they arrive in top condition and do not before arrival. On arrival, the best bunches are again manually selected. Before fermentation, the skin of the grape is removed. Fermentation is undergone using indigenous yeasts at a controlled temperature of 28-32°C. After the fermentation has finished, maceration takes place for two or three weeks to achieve maximum extraction of the tannins.

Maloactic Fermentation is then undergone for in French oak barrels from Allier, with racking every 3 months. Thus a perfect separation of wine and lees is achieved.

Hacienda Monaterio Reserva Especial ages for 20 months in French oak barrels. After this time, it is clarified and bottled where it rests for at least 12 months more before being marketed.
