Gallinas y Focas is a red wine made by Bodega 4 kilos in the geographical area of Mallorca. Gallinas y Focas is a charity project concerning a collaboration between the 4 kilos cellar and Amadip Esment, an organization that gives people with intellectual disabilities the same opportunities as all citizens.
Gallinas y Focas is the product of the active participation of members of Amadip Esment, both label design and the name of the wine are the fruits of their labour.
Gallinas y Focas is a blend of the indigenous variety of Mallorca, Manto Negro (90%) and Syrah (10%). The grapes come from vineyards cultivated using a little interventionist viticulture with a native plant cover that enhances soil microbiology.
Gallinas y Focas undergoes a fermentation in foudres of 4000 lires at a temperature below 20C. The wine is macerated for 20 to 25 days.
Once the fermentation process is complete, the wine is aged for 18 full months, 12 months in 500l oak barrels from Allier and 6 months in 4000l foudres of French oak.
In Mallorca, in 2006, Francesc Grimalt and Sergio Caballero created 4Kilos Vinícola (the name comes from the initial investment made by its two partners in pesetas: 4 million pesetas). This winery produces wines that reflect the strength of the grape and its nuances, but with a different approach and presentation. The labeling is spectacular, unique and different.
