The harvest of François Carillon Saint-Aubin 1er Cru Les Murgers Dents de Chien is pressed when it arrives in the cellar. The must is cleaned by decanting and then undergoes alcoholic fermentation and malolactic fermentation in barrels. The wine is then aged for 12 months on its fine lees also in barrels, and finally ends up spending 6 months in a foudre to finish assembling. Before bottling, and depending on the year, the wine is filtered and/or clarified so that it is completely stable. Domaine François Carillon uses inert gases to prevent oxidising the must and wines, and is thus able to reduce sulphite doses in its wines.
