Esencia Rural Pampaneo Ancestral comes from the 38 hectares of vineyards in the hot interior of the Iberian Peninsula. These are very old vines planted on sandy-calcareous soils and cultivated using traditional and artisan methods. There is no irrigation, no mechanisation and no chemical treatments. Only organic and environmentally friendly treatments are used.
The Esencia Rural Pampaneo Ancestral grapes are destemmed and then macerated, producing only a yeast cap, spontaneous fermentation takes place with native yeasts. Before the end of the process, it is bottled to allow the carbon dioxide to develop. Finally, the sparkling wine is sold without disgorging.
Made in one of the sunniest places on the Iberian Peninsula, using grapes with high alcohol content and no acidity, Esencia Rural Pampaneo Ancestral is a really great sparkling wine. A fresh and crisp traditional wine that will leave you lost for words.
