Eméritus, which means worthy in Latin, is a red wine made of Cabernet SauvignonSyrah and Petit Verdot
The vines are grown in clayey-calcareous soils in the property Dominio de Valdepusa (in Toledo) which belongs to the family of the Marquis of Griñon since 1292. The grapes are manually harvested, desteemed and transferred into the fermentation tanks by gravity. It goes through a long maceration which takes even four or five weeks and an ageing of 20-24 months in new and half-new French oak barrels from Allier in an ageing chamber with air-conditioned. It is a wine for ageing, which will be enjoyable from now and during at least the next 10-15 years. It is recommended to decant it before it is served. In this vintage, the production is limited to 14.400 bottles.
