Don Pedro de Soutomaior, a 15th century Galician nobleman, went down in history as Pedro Madruga, a nickname he earned from the attacks he carried out in the middle of the night, which was unusual for knights at the time.

This historical anecdote has been used by the Adegas Galegas winery to name their Don Pedro de Soutomaior Neve Carbónica wine, an Albariño made in the D.O. Rías Baixas (a coastal area of Galicia, northwest Spain), using carbonic maceration and that can be enjoyed just 3 months after being harvested.

To make this wine, the selected berries are macerated at -4ºC in dry ice for 8 to 10 hours. After that, there is a gentle pressing and only the first pressings are used.

Although Don Pedro Soutomaior Neve Carbónica is not the only Albariño made by this winery, there is no other like it because the maceration with dry ice maximises all the Albariño aromas.

In one of the most fertile in the Galician Rías Baixas, was founded in 1995, Adegas Galegas from the spirit of a man in the symbolic world of wine: Pepe Rodríguez.
Rías Baixas wines would not be where they are today without the native Albariño grape variety. Although red wines are also produced in Rías Baixas, practically 100% of Rías Baixas wines are white. Among them, the vast majority of them are made with the Albariño grape. As well as young wines, fresh and aromatic, the region also makes wines aged in the barrels, complex wines with great personalities. Albariño wines can either be single varieties, or be part of a blend with other characteristic grapes of the region: Treixadura, Loureira Blanca and Godello.
