Dominó Sãlao Frió is a natural, organic and vegan, barrel-aged red wine made by Dominó with the Aragonés, Arinto, Tamarez, Trincadeira, Castelão and Grand Noir varieties in the Portuguese region of Alentejo.
Dominó is the winery owned by restaurateur Vitor Claro who discovered his passion for wine while working in the restaurant of prestigious winemaker Dirk Niepoort. He set up his own winemaking project in 2016 together with Rita Ferreira in Alentejo. They produce modern, new-style wines that are very different from what is usually made in this wine region.
Dominó Sãlao Frió comes from vineyards in the town of Salão Frio (Alto Alentejo), in the middle of some hills. These are old vines planted in clay and granite soils and lying more than 700 metres above sea level. The area has a continental climate and is very cold. They use organic agriculture and the harvest is manual with the grapes selected in the vineyard itself.
In the winery, the Dominó Sãlao Frió grapes are macerated in whole bunches in stainless steel tanks for 60 days. They spontaneously ferment with native yeasts, then the wine, having been lightly pressed, is left to age in French oak barrels for 8 months. Finally, it rests in the bottle for 2 years before being sold.
Domino Sãlao Frió has a completely different profile compared to traditional Alentejo wines. This is a dry, fresh, low-alcohol wine that will leave you wanting more.
