Domaine Valette MesdemoiZelles Blanc is a natural white wine made by Maison Valette with the Chardonnay variety in the Burgundy region (Vin de France).
At Domaine Valette, work in the vineyard and the winery is as respectful as possible. The founder, Philippe Valette, is a true wine lover who seeks the purity of Chardonnay in beautiful terroirs. He is an outstanding winemaker who, through his purist way of working, clashes with the established rules and his wines have been denied recognition from the denomination more than once.
Domaine Valette MesdemoiZelles Blanc is a cuvée made from 75-year-old vines that are planted in the town of Vinzelles, south of Mâcon. The vines are cultivated using organic and biodynamic practices and the harvest is carried out manually at the optimum point of ripeness.
In the winery, the Domaine Valette MesdemoiZelles Blanc grapes are gently pressed, and the resulting must ferments spontaneously with native yeasts. The wine then remains on its own lees for about 12 months in used French oak barrels.
