Domaine Pignier Sauvageon Ouillée is a biodynamic white wine aged in cement eggs made by Domaine Pignier with the Savagnin variety in the AOC Côtes du Jura (France).

Domaine Pignier is an ancient winery in the heart of Jura that dates back to the 13th century and has been owned by the Pignier family since 1794. It is now siblings Jean-Etienne, Antoine and Marie-Florence Pignier producing wines that are characterised by biodynamic principles and minimal intervention. With certification from Demeter and Ecocert, they produce characteristic Jura wines under a yeast cap, using minimal sulphur and without clarifying or filtering.

Domaine Pignier Sauvageon Ouillée comes from vines planted on loamy soils with blue-black clay and Triassic limestone. These are biodynamic vineyards cultivated using manure, silica and herbal tea based treatments. With yields of around 23Hl / Ha, the harvest is carried out manually, selecting the grapes in the vineyard and quickly transporting them in small boxes to prevent damage.

When the Domaine Pignier Sauvageon Ouillée grapes reach the winery, they are gently pressed and fermented in “egg” tanks, filled to the top, for 12 months with native yeasts and without additives. Finally it is bottled without clarifying or filtering on a “flower” day of the lunar calendar. It is capped with natural cork marked with fire. 

Inspired by the old Jura name for the Savagnin variety, the Domaine Pignier Sauvageon Ouillée wine has a beautiful fruit expression and a great aromatic richness that is typical of the variety.
