Domaine des Pothiers La Colline en Flamme is an organic red wine from the AOC Côte Roannaise produced by Domaine des Pothiers.
Domaine des Pothiers is a family winery founded in 1916 that has reinvented Gamay Saint Romain, a unique Gamay clone. Part of its vineyard was planted in the 1970s. When Romain Paire, the last of the family to manage the winery, joined the Domaine in 2005, he restored the winery, converted its vineyards to organic farming and planted vines that ultimately covered some10 hectares. Nowadays the winery is taking a step towards respecting the nature and biodiversity of its vineyards by encouraging their biodynamic cultivation. Its plots have granitic soils and are located about 500 metres above sea level.
Domaine des Pothiers La Colline en Flamme is harvested manually in order to make a selection of bunches in the field, and to ensure the grapes arrive intact in the winery. It is vatted in cement tanks, and during the fermentation operations are carried out to extract colour, aromas and structure from the skins. The must-wine macerates with the skins for some 6 days. Once fermented, the wine is aged for 5 to 8 months in the vats.
