Domaine Des Marnes Blanches is the small project that Géraud and Pauline Frèmont set up in the town of Sainte Agnès (Jura). A winery that takes ancient practices and adapts them for today. Their focus is on enhancing the natural expression of the terroir and native varieties as well as minimal intervention in the winemaking process.
The Domaine Des Marnes Blanches Poulsard vineyards are planted with old vines on white loam soils 300 metres above sea level. These are ecologically certified vineyards that are cultivated without the use of herbicides, chemical fertilisers or synthetic products. They only use sulphur, copper, herbal infusions and some essential oils. The grapes are harvested by hand.
Once they reach the winery, the Domaine Des Marnes Blanches Poulsard grapes macerate in whole bunches over 20 days and ferment with the native yeasts found on the grape itself. The wine then ages for 9 months in 228-litre Bordeaux barrels. When it is ready, it is not filtered or clarified and it is bottled with a minimum amount of sulphites.
